Whats Left After Thanksgiving?

Leftovers are probably the best part of the holidays. It’s basically the same food without the pressure of making everything look perfect. Also, the food has had time to marinade and absorb all the flavors during the night. Basically, it’s an Ode to Food.
So here we are, after Thanksgiving, wondering what we can do with all the leftovers. Here is a menu for your after Thanksgiving dinner party:
-Breakfast: A very good option is the Thanksgiving Frittata. Frittata (the Italian version for omelet) is probably one of the best examples of smart leftovers option, and a great way to start your day. All you need are eggs, vegetables, and anything you’d like to throw in there, really. Ham, mushrooms, everything goes.
-Lunch: Depending on what you have, there are different options for dishes. Shepherd’s Pie if there a lot of mashed potatoes ( a great way to use the gravy, too!), or a Quiche if the potatoes are gone.
-Dinner: For a lighter dinner (it has been a lot of food, after all), you can take some delicious tortillas and make Thanksgiving tacos. And feel free to mix flavors (gravy, cranberry sauce and cheese!) and finish your after-Thanksgiving dinner in a fiesta!
I know it’s very tempting to re-heat the food over and over again (and eating cold pizza for breakfast), but if the food is there, you might as well combine it and prepare something new. After all, if you managed to do all that cooking for Thanksgiving Dinner, putting the leftovers together is for rookies.
